    Cherry Coke Camp Cake

My oldest son earned his cooking merit badge over the summer.  Last weekend we put his dutch oven baking skills to the test as he prepared one of his favorites desserts he learned to bake.  We call it Cherry Coke Camp Cake.  It is a simple recipe with delicious results. There are only four ingredients: Can/Bottle  12oz Chocolate Cake Mix Can of Cherries Chocolate Chips (optional) I found a couple of casserole liners at Publix that fit into my 10 inch dutch oven perfectly.  This was so helpful with clean up.  As my son will tell you cleaning a dutch oven of hard, stuck on food is not a fun…

    Fort De Soto Park

We battled traffic on I4 in the rain to get to Pinellas County, Florida where an amazing campground is located.  Fort De Soto Park is a  county park that consists of a chain of five islands.  It is a historical, beautiful park that was a joy to explore. Our campsite was located on one of these islands.  Here is a view from behind our campsite. Our campsite was nestled into a well shaded area with Live Oaks and palm trees.  The campsites are spacious, but are close to one another.  A thin barrier of trees and shrubs do add a sense of privacy, but getting to know your neighbor is…

How to Repurpose Wooden Cable Spools

My family in Illinois have been using spools as tables around their fire pit for a couple of years.  They are handy to have around to hold drinks and S’more supplies. I of course wanted them too after seeing the different ways they could be used on  Pinterest.   So after several attempts a couple of them made their way to Florida. Deciding what to do with them was the next challenge.  I settled on using them as nightstands, since my fire pit is currently not in operation. Sand and Stain This is not a tutorial on what to do.  This is just what I did to get the desired…

Crater of Diamonds Arkansas State Park

Our family took the long way home from Illinois to Florida just to make a side trip to this amazing state park in Arkansas.  The Crater of Diamonds State Park located in Murfreesboro, Arkansas is one the few places in the world where the general public can dig for diamonds. Hunting For Diamonds This is a great place for kids to learn hands on about diamonds and different ways to search for them.  We found the history of the diamond field to be fascinating and, of course, we were in awe of all the diamonds that had been found there. The day started out with a heavy rain, making the…
