Dutch Oven Sweet Potato Casserole
According to my husband it’s not Thanksgiving unless his Mom’s Sweet Potato Casserole is served. This is one of his favorite dishes that his Mom makes, so I thought I would give it a try, in a Dutch Oven.
This is such an easy recipe, there is no way I could mess it up. I course I can, and did! After two attempts, contemplating a third, I came to the conclusion that no one does it better than Mom.
Ingredients
- 3 Cans 15 0z. Sweet Potatoes (drained)
- 4 Tablespoons Butter (1/2 Stick)
- 1/2 Cup Light Brown Sugar
- 1 Cup Mini Marshmallows
- 1/2 Cup Cinnamon Imperials (Red Hots)
Directions
The directions to make Dutch Oven Sweet Potato Casserole are simple to follow. First drain the sweet potatoes and place them in a well greased foil insert or a well seasoned Dutch oven.
Next slice the 1/2 stick of butter into small chunks and spread out over the Sweet Potatoes.
Then add the brown sugar and cinnamon candy.
Finally top with marshmallows.
Bake
This is the tricky part of Dutch oven baking. Make sure to have your briquettes ready. The ratio for my 10 inch Dutch oven is 14 briquettes on top and 7 on the bottom to be at 350 degrees. The casserole should bake for 25-30 minutes. Check it at 20 minutes to see if the marshmallows are starting to brown. Baking times will vary.
This is the first time I have gotten briquettes ready on my own. My husband usually gets them ready for me. Just a side note when the bag says “match ready” that is a lie. Also don’t touch them to see if they feel hot.
Attempt #1
Attempt #1 had way too much liquid in it. This is why in the directions I say to drain all the cans of Sweet Potatoes. I originally only drained two and used all the liquid from the third can to make a syrup with the brown sugar and cinnamon candy. Instead I made soup.
Attempt #2
Attempt #2 on Dutch Oven Sweet Potato Casserole went much better. There is still liquid on the bottom, but not nearly as much as my first attempt. My husband says he likes it this way.
I would like to try it again, but use fresh sweet potatoes instead of canned. I’ll keep you posted on how those turn out.
Happy Thanksgiving
Don’t be afraid of trying new recipes in your Dutch oven, some will work really well like my Dutch Oven Cajun Pasta and others may take you a few times to perfect. Don’t give up.
I have so much to be thankful for this Thanksgiving and so glad I haven’t given up on my blog. Thank you to all my friends and family near and far that have supported me and Amateur Camper. I couldn’t have grown without you!
Happy Thanksgiving!
