Sweet Potatoes Made in a Campfire
I tried my hand at making Campfire Sweet Potatoes on our last camping trip at Myakka River State Park campground. My husband loves sweet potatoes smothered in butter and brown sugar, but also loves the way his Mom makes her Thanksgiving sweet potatoes with red hots. So I combined the two, with delicious results. I also learned a few things along the way.
How to Make Campfire Sweet Potatoes
The first step in making Campfire Sweet Potatoes is get a roaring fire started. You want to have hot coals to place the potatoes in.
The next step in to wash your sweet potatoes well and gather your toppings. I brought brown sugar, marshmallows, butter and cinnamon candy.
Next make a cut on the top of the potatoes and then wrap the potatoes in aluminum foil. I read you should have the dull side on the outside, but I’m sure if it really matters.
Baking
The first mistake I made when baking the potatoes was not waiting for the fire to die down. The next was putting the sweet potatoes on the grate of the fire ring. The potatoes were still hard after 30 minutes. This was not going to do if we planned on eating any time that night.
I waited for the fire to die down a bit and then placed the sweet potatoes directly on top of the coals. Make sure to use heat resistant gloves or grilling tongs when handling the foil wrapped potatoes.
Now we are cooking! It only took another 30 minutes for these babies to cook. They were hot, so handle with care!
Toppings
The toppings make the sweet potatoes. Some people like theirs with just butter, but we are not those people. I smothered ours with marshmallows, butter, brown sugar and cinnamon candy. This was more of a dessert than a side dish by the time I was done with it.
I cheated a bit and used my kitchen torch to roast the marshmallows and melt the brown sugar down.
They turned out fantastic! Even with a few mishaps along the way. Give these Campfire Sweet Potatoes a try on your next camping adventure.
