Christmas Cornbread in a Dutch Oven
Who doesn’t love cornbread? Take it up a notch with this simple and colorful cornbread recipe that is perfect for a Christmas Campout.
Recipe
1 Teaspoon oil or butter ( for greasing the Dutch Oven )
2 Cups Corn Meal Mix
1 1/3 Cups Buttermilk
1 Can Creamed Corn
1/4 Cup Olive or Vegetable Oil
1 Egg
1/2 Cup each of Red and Green Peppers
1/2 Jalapeño Pepper
1 Cup Shredded Mexican Mix Cheese
In a medium sized bowl add the cornmeal, buttermilk and oil. Mix well. Next add the egg and continue to mix until smooth. Add in the all the peppers, creamed corn and the cheese. Mix together. Pour the batter directly into a well greased Dutch Oven and bake at 450 degrees for 40-45 minutes.

As you can see from the picture above I forgot the shredded cheese, I did add it into the batter at the last second.
I do not know much about cornbread mixes, but the one I used above worked well for me. A Jiffy mix I think would work just as well.
Directions
Mix together the cornmeal, buttermilk and oil.
Next add in the egg.
Mix the egg in well. Finally add in the creamed corn and peppers.
Don’t forget the cheese!
Pour the batter into a well greased and seasoned Dutch Oven.
Baking
Baking in a Dutch Oven can be a bit tricky, but with time and practice it does get easier. Don’t be afraid to try this traditional outdoor style of baking.
You should have your briquettes ready. The easiest method is to use a grilling chimney. You will need hot briquettes, 10 on the bottom of the Dutch Oven and 19-20 on the top lid to get a 10 inch Dutch Oven up to 450 degrees.
Bake the cornbread for about 40 to 45 minutes. Baking times, especially with a Dutch Oven, will vary. Be sure to check on the cornbread a few times to make sure it baking evenly. You may have to rotate the lid to get a more evenly baked cornbread. Bake until a golden brown.
This makes a great side dish for any camping trip meal.
The only reason I called this Christmas Cornbread is because of red and green peppers and because I made it a week before Christmas. It is also called Mexican Cornbread or Fiesta Cornbread. No matter what you call it is an easy side dish to make on your next camping adventure. Happy Camping and Merry Christmas!
