Sweet Chex Mix
My husband’s favorite Holiday snack is his mom’s Sweet Chex Mix. She makes it every year to give out to friends and family. He is always waiting for his little bag to enjoy.
I was telling him about how well my Original Chex Mix was performing on Pinterest, he suggested I try making the Sweet Chex Mix version. With a few mishaps along the way I gave it try.
Ingredients for Sweet Chex Mix
- 4 Cups Corn Chex
- 4 Cups Wheat Chex
- 4 Cups Rice Chex
- 4 Cups Pretzels
- 4 Cups Nut Mix
- 1/2 Cup Light Corn Syrup
- 2 Cup firmly packed Brown Sugar
- 2 Sticks of Butter
- Teaspoon of Vanilla
Directions
Pour your cereal, nuts and pretzels into a large bowl. As you can see this bowl is a bit small for the mix. Try to find a large bowl it will make the stirring step a lot easier. Set the mix a side.
Bring to boil the butter, light corn syrup and brown sugar. I don’t think using light or dark brown sugar matters. Either one should work just fine. Simmer for 5 minutes then add the vanilla.
Next pour your sweet mixture on the top of the cereal mix covering it all as you stir. Bake for one hour at 200 degrees. I found out that a roasting pan is the best way to bake the Sweet Chex Mix. It was far easier to stir the mix in the pan than a cookie sheet. A lot less mess to deal with as well.
Then stir every 15 minutes.
Finally take the mixture out of the oven and place on wax paper to cool and harden. This took well over an hour for me.
This was a lot easier to make than I thought it would be. My husband liked it anyway. It may not be just like his Mom’s but it is pretty darn close.
Makes a Great Gift
I grabbed the last Christmas treat bags at Target and filled them with Sweet Chex Mix as gifts for my husband’s squad. This mix is addictive and is best enjoyed in small portions. The recipe also makes a lot. It’s a great holiday treat to give away to family, friends, neighbors and squad mates.
