Blueberry Buckle in a Dutch Oven

Blueberry season in Central Florida is winding down. It is the perfect time to make Blueberry Buckle in a Dutch Oven when these berries are at their peak sweetness.

Blueberry Buckle

What is Blueberry Buckle? Blueberry Buckle is a cake like dessert. The streusel topping “buckles” under the force of the cake mix rising. It’s really just a simple, sweet tasting cake that is perfect after a day of berry picking.

Recipe

  • 3/4 Cup Sugar
  • 1/4 Cup Softened Butter
  • 1 Egg
  • 3/4 Cup Milk
  • 1 Teaspoon Vanilla
  • 2 Cups Flour
  • 2 Teaspoons Baking Powder
  • Dash of Salt
  • 2 Cups Fresh Blueberries (Frozen Can Be Substituted)

Streusel Topping

  • 1/2 Cup Sugar
  • 1/3 Cup Flour
  • 1 Teaspoon Cinnamon
  • 1/4 Cup Butter

In a large bowl mix together the sugar, butter, egg, milk, and vanilla. Add the flour, baking soda and salt. Mix well. Gently fold in the blueberries to the mix. Pour the cake mixture directly into a well-seasoned Dutch Oven. In a small bowl mix the sugar, flour, cinnamon, and butter until it is a crumbly topping. Pour the topping over the cake mixture. Bake the cake in the Dutch Oven at 350ยบ for 40-45 minutes. Baking times will vary.

Blueberries are the star of this recipe. Make sure to use fresh blueberries, if you can’t find them, frozen blueberries can be substituted. This is a simple recipe with ingredients that you should have on hand even for a camping trip. Flour, sugar, egg, baking powder, milk, butter, cinnamon, vanilla, and a bit of salt all come together with the blueberries for one amazing dessert.

Mix it Up

Mix the sugar, vanilla, milk, and egg. Next, add the dry ingredients; flour, baking soda, and a dash of salt. Blend all together. Finally, gently add in the blueberries.

Carefully fold in the blueberries. You want to keep them whole and not in pieces.

Pour the cake mix into a well-seasoned and greased Dutch Oven or use a Dutch Oven liner that also has been greased.

Streusel Topping

In a small bowl mix together the sugar, flour, butter, and cinnamon. A fork works well to smash everything together. I did this outside on a sunny Florida day and the butter was starting to soften very quickly. So I know a lot of baking professionals are going to look at this and shake their heads. I know it should be a bit more crumbly, but it is what it is. It still worked!

Next spread the streusel topping over the top of the cake mix. As you can see I did not completely cover every spot, but that is alright. As you will see, it bakes up amazingly.

Baking with a Dutch Oven can be intimidating, but give it a try. You will be amazed at how easy and convenient it is to use.

For this recipe, I used my chimney to ready around 21 briquettes to get the temperature in the Dutch Oven to 350ยบ. Place approximately 14 briquettes on the top lid of the Dutch Oven and 7 below. This is for a 10-inch Dutch Oven. If your oven is a different size consult your owner’s manual for the correct number of briquettes or check out this chart. Bake for 40-45 minutes. Baking times will vary, it may be a shorter or longer time. Use a lid lifter to check the progress of your Blueberry Buckle.

The cake is done when the top is golden brown and begins to “buckle”. Blueberry Buckle is best served warm with a scoop of vanilla ice cream.
