Easy To Make Tropical Granola Mix

Summer is still in full swing in Florida and we a few more camping trips coming up. It’s the perfect time to make a Tropical Granola Mix to snack on. This mix is easy to make and a quick snack to fuel hungry campers.

Tropical Granola Mix

Tropical Granola Mix Recipe

  • 1/2 Cup Vegetable Oil
  • 1/2 Cup Honey
  • 1 Tablespoon Vanilla
  • 1/2 Cup Firmly Packed Brown Sugar
  • 1/2 Teaspoon Salt
  • 7 Cups Old-Fashioned Rolled Oats
  • 1/2 Cup Sweetened Shredded Coconut
  • 1/2 Cup Slivered Almonds
  • 1/3 Cup Dried Chopped Mango
  • 1/2 Cup Dried Chopped Pineapple
  • 1/2 Cup Dried Cherries

Preheat the oven to 325ยบ. In a large saucepan, over medium heat, pour the oil, honey, brown sugar, vanilla and salt all together. Stir the mixture until the sugar dissolves. In a large bowl, combine the oats, coconut and almonds. Pour the sugar mixture over the dry ingredients and stir well. Make sure to coat everything completely.

Take a large baking sheet, covered with parchment paper and spread the mixture evenly onto it. Bake the granola mix for about 20-25 minutes until a golden brown. Be sure to stir the granola mix a few times during the baking process.

Add the fruit mixture of mango, pineapple and cherries after the granola is taken from the oven. Firmly pat together to get larger granola clusters. Let the granola cool then break apart into smaller pieces. Be sure to store in an airtight container. Enjoy!

These are simple ingredients that should not be hard to find. The oil, honey, salt, brown sugar, and vanilla are pantry staples. I used the light brown sugar, but a dark brown sugar should work as well.

I used almonds that were slivered, but chopped would work as well. Whatever your preference.

The pineapple and mango needed to be chopped a bit to work in the granola mix. They were large pieces when I bought them. If you are trying to cut the sugar in the recipe, try to find sugarless dried fruit and coconut. They can be a bit difficult to find and may take a bit of searching to locate.

Be sure to coat the dry ingredients well with the sugar mixture. Stir to completely cover the oats and make your granola stick together.

I lined the biggest baking sheet I had with parchment paper and spread the granola mixture out as thinly as I could. I then put the mixture into the oven at 325ยบ for about 25 minutes, stirring it a couple of times during the baking process. Be sure to bake the mixture until it is golden brown, and the coconut is toasted a light brown.

Next add the dried fruit and mix into the granola.

Pat the mixture together to firmly pack it and let it cool. After cooling break apart into small clusters.

Finally store the tropical granola in an airtight container. The mix should last a few weeks. Enjoy on your camping adventure or hiking trip! Happy Camping!
