Dutch Oven Macaroni and Cheese
Our latest camping trip, Crooked River State Park, was a bit chilly and rainy. It was a great idea that we decided to try making Dutch Oven Macaroni and Cheese. This dish was such a comfort and went well with our dinner of grilled hamburgers.
Ingredients
- 1/2 package of cooked elbow macaroni (about 8 oz)
- 1 small package of Velveeta Cheese (8 oz)
- 1 Package of shredded cheese (whatever you prefer)
- 1/2 Stick of melted butter
- 1 Cup of milk
- 2 Tablespoons of flour
- Salt and Pepper to taste
Directions
If you have time, pre-cook the elbow macaroni before your campout. Make sure to add a little bit of olive oil to the pasta so it doesn’t stick together. Refrigerate the pasta until you are ready to use it. Otherwise cook the pasta over an open flame or on your RV stove.
Pour the pasta into a well seasoned Dutch Oven or a Dutch Oven liner.
Next cut the Velveeta into cubes and add it to the elbow macaroni.
Then warm the milk a bit, not boiling, just a bit until it is warm, in your RV microwave or over a campfire. Add the melted butter and whisk in the flour.
Pour this mixture over the pasta. Add the salt and pepper to taste and mix in.
Finally add half a bag of shredded cheese into the mixture. Stir the macaroni and cheese then finish it off by pouring the rest of the shredded on top.
Baking
You should have your briquettes ready to go. To get the temperature to 350 degrees to bake the Dutch Oven Macaroni and Cheese place 14 briquettes on top of the lid of the Dutch oven. Make sure to have 7 briquettes below the Dutch Oven. We had a bit more below because the Dutch oven wasn’t directly on the ground.
Bake the Macaroni and Cheese for about 60 minutes. If it isn’t brown enough on top for you had a few more briquettes on top and bake a bit longer. We had to do this. If you have ever baked with the Dutch oven before you are well aware that baking times will vary.
To the amazement of everyone this Dutch oven recipe turned out! It was cheesy goodness that warmed us all up.
