Simple Pumpkin Spice Cake in a Dutch Oven

We made this simple, two ingredient, Pumpkin Spice Cake in our Dutch Oven on our last camping trip at Hillsborough River State Park. It was easy and quick to make. The perfect ending to a day of hiking and canoeing.

Pumpkin Spice Cake Recipe

  • Boxed Spice Cake Mix
  • Canned Pumpkin

In a large bowl combine together the boxed spice cake mix and the can of pumpkin. Mix well. Pour the mixture directly into a well seasoned Dutch Oven or an oil sprayed Dutch Oven liner. Place 7 briquettes on the bottom of the Dutch Oven and 14 on the top lid to reach a temperature of 350º. Bake for approximately 25 minutes or until done. Baking times will vary. Enjoy warm or cool and add frosting.

This will be the easiest cake you will ever make on a camping trip. Just don’t forget to bring a can opener. The only two ingredient you will need are a boxed spice cake mix and a can of 100% pure pumpkin. You do not need eggs, butter, or milk. I have seen this recipe with eggs added, but honestly you really do not need them. The cake will come out moist and taste amazing.

It takes a lot of work to mix this together, but it will. It will be a thick mixture. I did the mixing right in my foil liner, because it was only two ingredients and it saved dirtying up a bowl.

Baking

Dutch Oven Baking

You will need to prepare your briquettes before baking. We have found that the easiest way to do this is using a chimney. When the briquettes are ready, place 7 briquettes on the bottom of the Dutch Oven and 14 on the top lid to get your Dutch Oven to a baking temperature of 350º. I use a 10″ Dutch Oven. If your Dutch Oven is a different size, you will need to follow the chart that came with your oven or use this baking chart. I poured the cake mix into a Dutch Oven liner, so that I could take it out of the Dutch Oven. I wanted it to cool faster and not over bake.

Baking times will vary, especially with using a Dutch Oven. Check your cake at about 20 minutes and go from there. Insert a toothpick to see if it comes out clean, if it’s not, bake a bit longer.

To Frost or Not to Frost

My youngest loved this cake without the frosting. He is not a big cake eater and doesn’t like frosting that much. My husband and I on the other hand love frosting, and can’t imagine having a cake without frosting. That’s just bread.
