Pop Rock’n Popcorn

We are packing up and getting ready for our next camping adventure. I thought it would be a great time to practice my sister Stacie’s popcorn recipe, Pop Rock’n Popcorn, for our camping snack this weekend. I plan on making this for our 4th of July Blowout Party when I head back home next month.

Pop Rock’n Popcorn is a fantastic snack for the 4th of July or a camping weekend. The sweet taste combined with the surprise pop bursting in your mouth is great for watching fireworks or sitting by a crackling fire at night.

Recipe

  • 24 Cups of Popped Popcorn (6 quarts)
  • 6 squares Almond Bark
  • 4 Packs of Red and Blue Pop Rocks
  • Salt
  • Red and Blue Sprinkles

Pop your popcorn, lightly salt it and place the popcorn in the biggest container you have. Melt 6 squares of the Almond Bark in the microwave in 30 second intervals, stirring between each heating. Pour the melted Almond Bark on the popcorn, stirring as you go. Quickly sprinkle on the 4 packages of Pop Rocks. Next add your red and blue sprinkles. Stir the popcorn mix well, making sure it it coated with Almond Bark, Pop Rocks and sprinkles.

I used a Whirly Pop to make my popcorn and one pan made about 24 cups of popcorn. I don’t recommend using microwave popcorn. Either pop the corn on the stove or use an air popper.

Pop Rocks are a bit hard to find, at least in Florida. A great place to look is the Dollar Store or here.

My Publix did not have Almond Bark. I had to go to Wall-Mart to find it. It’s worth the trip to use Almond Bark and not white chocolate chips. The bark sets up quickly and doesn’t take as long to dry.

Mix Popcorn Well

After popping the 24 cups of popcorn find the biggest container you have. You will need the room to mix this up. Pour the Almond bark on first, mixing it together as you go. Next add the Pop Rocks. Finally add the sprinkles. I recommend using the red and blue sprinkles to truly make this patriotic. The Pop Rocks are great for the popping effect but not so much for the color impact you want.

Lay down wax paper on a table. Pour the popcorn on it to set up and dry. It takes about 15-20 minutes.
